3 ingredient peanut butter cookies, + Non-stick Silicone Baking Mat review #ModitionalKitchen


A friend of mine made me some peanut butter cookies the other day (gluten free). And I think I ate the all 6 in one sitting. So I had to ask her how to make it. When I found out it has only 3 ingredients and how easy it was to make I just had to share it with you. 

1 Cup sugar
1 Cup peanut butter
1 egg



You can just any kind of peanut butter, or even almond butter if you want. First you mix the egg and sugar together. It is best if you use a mixer because you want to blend them well. It will come out looking almost like thick milk.


Then you want to fold in the peanut butter. DON'T OVER MIX IT.

If there is still a little white that is fine but try to mix it all together without over doing it. This is about what it should look like when it is mixed.


Here is the key step.... REFRIGERATE IT. For about 15ish minutes. This will help hold it all together for when you are rolling them out. 

At which time you can get your cookie sheet ready. I used a Professional Grade, Eco-friendly, Non-stick Silicone Baking Mat. This way I did not have to spray the cookie sheet before hand. I had never used one before, and now after using this one.... I will never not use one again.  

Once it's time, take a small bowl and add some more sugar. Get a spoon and make small balls out of your cookie mix and then roll it in the sugar. After you have rolled them all into balls and in the sugar, fork them down. 


At this point you can sprinkle a little sea salt on top for taste (I like too) or just leave it. Cook it at 350' for about 8-10 minutes. However if you want to add some chocolate on top (I did), cook for 5 minutes then take out and add the chocolate and cook for 5 more minutes.


Don't be scared to use the Non-stick Silicone Baking Mat. It did not under cook the cookies at all. And the cookies came off with a with ease. The Baking Mat was also really easy to clean up, just a little water and I wiped it down (soap too). Best part of the mat is that it can roll up and be put just about anywhere, so it is not taking up much space in your kitchen. There is also a lifetime guarantee, so if you are not happy with your mat or any reason you can get a refund. Also something I learned about the mats is that you can freeze or refrigerate them.

1 Cup sugar
1 Cup peanut butter
1 egg

Mix egg and sugar well together. Then add fold in 1 cup peanut better. Don't over mix it. Refrigerate for about 15 minutes. Now Preheat oven to 350'. In a separate bowl add about 1/2 cup of sugar. Roll cookie dough into small balls and roll them in the bowl of sugar, one at a time. (to give the cookies a light dusting of sugar all over). Ether use a baking mat, or spray cookie sheet with a non stick spray. Place onto cookie sheet and press down with a fork. At this time you can duck the cookies with sea salt for taste if you want to. Cook for 8-10 minutes, unless you want to add chocolate. Then cook for 5 minutes, add chocolate and cook for the rest of the 5 minutes. Take cookies out of the oven and let it cool.
