Best Brownies Ever


I love chocolate and have been trying to find a brownie recipe that is perfect. I like a cross between a brownie that is cake like, but still rich and fudgy. I used Alton Brown's recipe found here.



For the cocoa powder I used. FineNaturals Ultra Dark Cocoa Powder found on Amazon.

I found this cocoa powder to be the best quality and flavor without breaking the bank. It is silky and mixes smoothly. The flavor is rich and deep without having any bitter aftertaste that some dark cocoa powders have. It it so fine that it works great for rolling truffles and having a light dusting of the raw powder. Because it is a dark cocoa powder it is full of all the heath benefits. What would you make with this cocoa powder?

Ingredients
Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter (2 sticks)
1 1/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon kosher salt

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into a greased and floured 8-inch square pan and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

These are almost a flourless chocolate cake flavor and texture. Best brownies ever- thank you to Laura Johnson for bringing us half a batch to taste test...which I was not good about sharing.
